Blackberry Yogurt Muffins

These blackberry muffins are soft and fluffy, and each bite is full of juicy blackberries. Because they dont have butter in them, they are a better choice for breakfast or a snack.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Greek yogurt
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt

In another bowl, mix the Greek yogurt, vegetable oil, egg, and vanilla extract until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; its okay if there are a few lumps

Gently fold in the fresh blackberries into the batter

Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely
