Ingredients:
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1 can 14
- 5 ounces diced tomatoes, undrained
- 1 can 15 ounces white beans, drained and rinsed
- 1 package 16 ounces potato gnocchi
- 1 cup chicken broth
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley, for garnish
Instructions:
Heat olive oil in a large skillet over medium heat
Add Italian sausage and cook until browned, breaking it into crumbles
Add diced onion and minced garlic to the skillet; cook until softened
Stir in dried basil, dried oregano, and red pepper flakes
Add diced tomatoes, white beans, potato gnocchi, and chicken broth to the skillet; stir to combine
Season with salt and pepper to taste
Cover and simmer for about 15 minutes or until gnocchi is cooked through and the sauce has thickened
Sprinkle shredded mozzarella cheese over the top and cover until cheese is melted
Garnish with chopped fresh parsley before serving
