This Picante Chicken & Black Bean Soup is a hearty, tasty meal thats great for busy days. It only needs a few simple ingredients and cooks quickly in the slow cooker, which lets the flavors blend perfectly.
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 can 15 oz black beans, rinsed and drained
- 1 cup salsa
- 1 cup low-sodium chicken broth
- 1 cup frozen corn kernels
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: chopped cilantro, diced avocado, shredded cheese, sour cream
Instructions:
In the slow cookers bottom, put chicken breasts
Chicken broth, corn, onion, garlic, cumin, chili powder, salt, and pepper should all be added
Mix the ingredients together
When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours
When the chicken is done, use two forks to shred it and put it back in the slow cooker
Serve hot, and if you want, top with any toppings you like
