With a warm tortilla and lots of rich enchilada sauce, these Vegan Refried Bean Enchiladas are a delicious mix of hearty refried beans, healthy quinoa, and colorful vegetables. Excellent for a filling and tasty meal
Ingredients:
- 1 can 15 ounces refried beans
- 1 cup cooked quinoa
- 1 cup corn kernels
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup enchilada sauce
- 8 small tortillas
- 1 cup vegan cheese, shredded
- 1 avocado, sliced optional
- Fresh cilantro for garnish optional
Instructions:
Before you start cooking, heat the oven to 375F 190C
Put cooked quinoa, corn kernels, diced bell peppers, and diced onions in a bowl and mix them all together
Spread some of the bean mixture on each tortilla
Then, roll them up and put them in a baking dish seam side down
Cover the rolled tortillas with the enchilada sauce
Cover the top with vegan cheese shreds
Put foil over the baking dish and bake for 20 minutes
Take off the foil and bake for another 5 to 10 minutes, until the cheese melts and starts to bubble
If you want, you can add sliced avocado and fresh cilantro as a garnish before serving
