Spring Thai Salad with Peanut Sauce

This Spring Thai Salad is a refreshing and flavorful dish that combines a variety of fresh vegetables and herbs with a creamy peanut sauce. Its a perfect balance of textures and tastes, making it a delightful and healthy meal option for spring or anytime you crave a light and delicious salad with a Thai twist.

Ingredients:

  • 2 cups mixed greens
  • 1 cup thinly sliced cucumber
  • 1 cup shredded carrots
  • 1/2 cup red bell pepper strips
  • 1/2 cup fresh bean sprouts
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup chopped scallions
  • 1/4 cup cooked and shredded chicken optional
  • For Peanut Sauce: 1/4 cup peanut butter, 2 tbsp soy sauce, 2 tbsp lime juice, 2 tbsp honey, 1 clove garlic minced, 1/2 tsp grated ginger, 1/4 tsp red pepper flakes optional

Instructions:

In a large bowl, combine mixed greens, cucumber, carrots, red bell pepper strips, bean sprouts, cilantro, mint leaves, and scallions

If desired, add cooked and shredded chicken to the salad

In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, and red pepper flakes if using until smooth

If the sauce is too thick, you can thin it with a little water

Drizzle the peanut sauce over the salad and toss everything together until well coated

Sprinkle chopped roasted peanuts on top for added crunch and flavor

Serve immediately and enjoy
