Gluten-Free Lentil Stew with Sausage and Squash

This hearty gluten-free lentil stew with sausage and squash is a comforting and nutritious dish perfect for cold evenings. Packed with protein, fiber, and flavors, its a satisfying meal thats both gluten-free and dairy-free.

Ingredients:

  • 1 cup dried lentils
  • 4 cups chicken or vegetable broth
  • 1 lb gluten-free sausage, sliced
  • 2 cups diced butternut squash
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

In a large pot, heat olive oil over medium heat

Add onion and garlic, saut until softened

Add sliced sausage to the pot, cook until browned

Stir in dried lentils, diced butternut squash, thyme, and rosemary

Pour in chicken or vegetable broth, bring to a boil

Reduce heat, cover, and simmer for about 30 minutes or until lentils are tender

Season with salt and pepper to taste

Serve hot and enjoy
